Island Breeze Foods Perfect Pumpkin Muffin Recipe
3 Large Eggs
2 tbsp. warm ghee (clarified butter) or instead, warmed coconut oil
1⁄2 cup palm sugar or local honey
2 1⁄4 cups almond flour
1 tsp baking soda
1⁄2 tsp sea salt
Preheat oven to 350 degrees. Mix the pumpkin, eggs, ghee and palm sugar in a large mixing bowl until smooth. Stir in dry ingredients, slowly. Grease a muffin tray or use paper muffin liners. Using a large spoon, scoop batter into the muffin tin / paper liners and bake for about 45 minutes.
Let cool at least 2 hours, if you can resist them! We usually grab one while it's still warm and slather coconut cream onto it for an added treat.
This recipe makes about 12 muffins.
