Ingredients for Ahi Tuna Poke`
8 oz Mango Diced into small cubes
1/2 small Red Onion sliced thinly
1 bunch Scallions chopped fine, green part only
1/2 bunch Cilantro coarsely chopped
1 oz Lime Juice
1/2 oz of Sesame Oil or to taste
1 oz Soy Sauce / Coconut Amino Acids*
1 Lime for Slices for garnish
1/2 oz Sesame Seeds (white or black) for garnish
* For PALEO Diets we recommend Coconut Secret Amino Acids to replace Soy Sauce.
How to Make the Ahi Tuna Poke`
Slowly drizzle the Sesame Oil while tossing the ingredients. Add Scallions, Cilantro and Sesame Seeds. Toss.
Chill for at least One Hour.
Serving Suggestion - Spoon the Tuna Poke` into Martini or Margarita Glasses before chilling. Add Lime slices to the rim and sprinkle Sesame Seeds on the top of the Poke for a lovely garnish. Serve and Enjoy!
Ingredients for Plantain Tostones
Coconut Oil for frying
How to make the Plantain Tostones
Fry the pieces in Coconut Oil over medium heat until slightly browned. Remove from oil and drain on paper towels.
Once cool enough to handle, using the flat part of your largest kitchen knife - flatten the plantain into a small disc.
Return the Plantain disc to the oil and fry a second time until crisp and golden brown. You now have a Tostone!
Remove from oil and drain on paper towels.
Sprinkle with salt.
You can make these ahead and warm them in the oven or a microwave.
Serve these with the chilled Ahi Tuna Poke`, as a warm, salty crispy as a foil.
WINE - I suggest a chilled Sauvignon Blanc or Reisling to bring out and enhance the flavors of this dish!
